SPINACH SET DOSA

INGREDIENTS


  • Raw Rice – 2 cup

  • Urad dal – ½ cup

  • Fenugreek seeds – 1 tsp

  • Beaten rice  - 1 cup thin or ½ cup thick (can used Red beaten rice also)

  • Oil – for cooking

  • Salt – as per taste

  • Spinach grinded – ½ cup


INSTRUCTIONS


  • Soak Raw rice , urad dal and fenugreek seeds for 4-5 hours

  • Wash and soak beaten rice for 30 minutes

  • Drain the water, In wet grinder, add urad dal, fenugreek seeds, raw rice and beaten rice and grind to a smooth batter for dosa consistency

  • Close the lid and let it rest for 7-8 hours or overnight for fermentation.

  • Next day, add salt and ensure batter is not too thick and not too thin and adjust accordingly.

  • Add the grinded spinach to one portion of dosa batter.

  • Heat dosa pan, pour ladle full of batter and spread it bit. Set dosa should be thick and small. Close the lid for few seconds and let it cook.

  • Open the lid, drizzle oil or ghee and serve 

  • Optionally you can cook the other side for couple of seconds.
