Ingredients:
Poha (Flaked Rice) – 1.5 cups
Onions – 1 med no. (finely chopped)
Green Chillies – 1-2 (slit or chopped)
Curry Leaves – 1 spring
Potato – 1 med no (optional)
Oil – 1 tbsp
Peanuts – 4 tbsp
Mustard Seeds – ¾ tsp
Cumin Seeds – ¾ tsp
Asafetida – a pinch
Turmeric Powder – ¼ tsp
Salt – as required
Sugar – ½ - 1 tsp
Lemon Juice as required
Coriander Leaves – 2 tbsp
Method:
Rinse the poha in water using a strainer. Drain the water completely. Set it aside.
When poha turns soft add sugar and salt and give it a mix.
Heat a pan and dry roast peanuts until golden and aromatic. Keep this aside.
Heat oil in the same pan, add cumin seeds and mustard. After they have popped, add asafetida, onions, curry leaves, chillies. Saute until onions turn golden brown.
Add potato cubes and sauté for a few minutes; sprinkle water if necessary (optional).
Add turmeric and mix in the poha.
Cook on low heat until poha turns hot.
Add coriander leaves and turn off.
Sprinkle lemon juice and mix well. Garnish with dry roasted peanuts and serve hot.
