Mixed Vegetable Paratas 3 serves

Ingredients:
Chapathi dough – 6 balls
Carrot (grated) – ¼ cup
Cabbage (shredded) – ½ cup
Capsicum (finely chopped) – ½ cup
Spring Onions (chopped) – 2 tbsp
Fenugreek leaves – 2 tbsp
Ginger and garlic – ½ tsp each
Turmeric Powder – ½ tsp
Green Peas (Boiled and mashed) - ¼ cup
Coriander Leaves (chopped) – 1 tbsp
Green chilli – 1 no (chopped)
Garam Masala – ¼ tsp
Coriander powder – 1 tsp
Red chilli powder – ½ tsp
Oil – 1 tsp
Salt to Taste
Method:
Heat oil in a pan. Add the ginger and garlic and sauté until the raw flavor disappears. Add all the vegetables and sauté.
Add salt, turmeric and cook over medium heat and cook until vegetables become tender.
Add the peas and mix well. Remove from flame. Allow the mixture to cool.
Take wheat flour in a mixing bowl, add 1 tsp oil, salt and mix.
Add the vegetables, chopped coriander leaves, green chilli, red chilli powder, garam masala, coriander powder. Mix them uniformly.
Add small amounts of water and knead to make dough. Let it rest for 10 mins.
Roll the dough balls to make thick discs.
Cook both sides on a tawa. Can be served with curd.
