MANIPURI STYLE KAROTKHABI KANGHOU/ BITTER GOURD & POTATO STIR FRY

INGREDIENTS

  • Bittergourd – 1 (sliced)

  • Potato – 1 (Peeled and diced)

  • Onion – 1 (chopped)

  • Cumin seeds – 1 tsp

  • Turmeric powder – 1 tsp

  • Red chilli powder – 1 tsp

  • Green chillies – 2 (chopped)

  • Salt – as per taste

  • Oil – 2 tbsp

INSTRUCTIONS


  • Heat oil in a pan, add cumin seeds, when it starts crackling add onions and cook until it is soft.

  • Add chopped green chilies, bitter gourd, potato and let it cook for2-3 minutes.

  • Now add salt, turmeric powder and red chili powder. Mix everything well.

  • In medium heat, cover the pan and let it cook till vegetables are cooked. Once done, switch off the heat
