MANIPURI STYLE KAROTKHABI KANGHOU/ BITTER GOURD & POTATO STIR FRY

INGREDIENTS
Bittergourd – 1 (sliced)
Potato – 1 (Peeled and diced)
Onion – 1 (chopped)
Cumin seeds – 1 tsp
Turmeric powder – 1 tsp
Red chilli powder – 1 tsp
Green chillies – 2 (chopped)
Salt – as per taste
Oil – 2 tbsp
INSTRUCTIONS
Heat oil in a pan, add cumin seeds, when it starts crackling add onions and cook until it is soft.
Add chopped green chilies, bitter gourd, potato and let it cook for2-3 minutes.
Now add salt, turmeric powder and red chili powder. Mix everything well.
In medium heat, cover the pan and let it cook till vegetables are cooked. Once done, switch off the heat
