Malvani Chicken Curry

Ingredients:
Chicken – 1 kg (native breed)
Coconut – 1 no
Desiccated Coconut Grated – 1 small bowl
Onion – 6 small nos
Coconut Oil – 10 tbsp
Malvani Garam Masala – 7 tbsp
Turmeric Powder – 1 tbsp
Coriander seeds – 6 tsp
Fennel Seeds - 2 tsp
Black Pepper Seeds – ½ tsp
Clove – ½ tsp
Mace – ½ tsp
Poppy Seeds – 2 tsp
Cinnamon – 1 inch
Star Aniseed – 2 nos
Nutmeg – ½
Green Cardamom – 4 nos
Black Cardamom – 2 nos
Ginger – 2 inch
Salt – to taste
Method:
Grate coconut finely.
Grind half tsp of salt, turmeric, chopped ginger, 2-3 tbsp freshly grated coconut to make a fine paste. Marinate chicken pieces with with this mixture.
Chop three onions vertically and dice three other onions.
Shallow fry the desiccated coconut and whole spices with some oil for a minute.
In another pan shallow fry vertically chopped onions with grated coconut with some oil.
In a bigger pan, heat oil and add the diced onion,
Evenly coat the chicken pieces with garam masala and half of the coconut, masala mixture. Add this to the pan with fried diced coconuts and cook it thoroughly.
Add 500 ml water and cover the pan with a lid and let it cook for 20 minutes with occasional stiring. After the chicken is cooked add ground mixture of fresh coconut and remaining coconut spice mix.. Add salt and let it cook for another 10 minutes.
Add salt to taste. Garnish with finely chopped coriander.
