Kakdi Chi Koshimbir – 3 servings

Ingredients:


  • Cucumber (peeled, cubed) – 1 no

  • Coriander Leaves (finely chopped) – 2 tbsp

  • Green Chilli (finely chopped) – 1 no

  • Fresh grated coconut – 2 tbsp

  • Roasted Peanuts – 2 tbsp (roughly crushed)

  • Sugar – ½ tsp

  • Curd – ½ cup

  • Lemon Juice – 2 tsp

  • Salt to taste

  • Oil – 1 tsp

  • Mustard Seeds – ½ tsp

  • Dry Red Chilli – 1 no

  • Curry Leaves – 1 spring

Method:


  • In a mixing bowl, combine cucumber, coriander, green chilli, coconut and give it a good mix.

  • Add the pounded peanuts to this mixture

  • Season with salt, sugar, lemon juice and mix evenly.

  • Add in curd and stir well.

  • Heat oil in a pan, add mustard seeds and chilli and let it splutter. Once done add the curry leaves and immediately remove from flame and add it to the cucumber mixture.
