Kakdi Chi Koshimbir – 3 servings

Ingredients:
Cucumber (peeled, cubed) – 1 no
Coriander Leaves (finely chopped) – 2 tbsp
Green Chilli (finely chopped) – 1 no
Fresh grated coconut – 2 tbsp
Roasted Peanuts – 2 tbsp (roughly crushed)
Sugar – ½ tsp
Curd – ½ cup
Lemon Juice – 2 tsp
Salt to taste
Oil – 1 tsp
Mustard Seeds – ½ tsp
Dry Red Chilli – 1 no
Curry Leaves – 1 spring
Method:
In a mixing bowl, combine cucumber, coriander, green chilli, coconut and give it a good mix.
Add the pounded peanuts to this mixture
Season with salt, sugar, lemon juice and mix evenly.
Add in curd and stir well.
Heat oil in a pan, add mustard seeds and chilli and let it splutter. Once done add the curry leaves and immediately remove from flame and add it to the cucumber mixture.
