HAGALAKAYI PALYA RECIPE / BITTER GOURD STIR FRY

INGREDIENTS
Bittergourd – 1 no
Urad dal -1 tsp
Oil – 2 tsp
Mustrd seeds – 1 tsp
Turmeric powder - ½ tsp
Asafoetida – pinch
Curry leaves – few
Jaggery – 1 tbsp
Tamarind – 1 small melon sized
Salt – as per taste
Water – 1 cup
To Grind
Red chilli – 2-4 nos
Mustrad seeds - ½ tsp
Grated coconut – 3 tbsp
INSTRUCTIONS
Wash, finely chop bitter gourd and soak it in water with pinch of salt. Grind the contents mentioned under to grind without water
In a pan, add oil, season with mustard seeds, urad dal, curry leaves, turmeric powder and asafetida.
Drain and add in the chopped bitter gourd, fry for a minute. Add water and bring to boil and cook till it is soft.
Once it is cooked add jiggery, tamarind extract, salt. Once it is cooked and dry add the ground paste and mix well for 2 minutes.
