HAGALAKAYI PALYA RECIPE / BITTER GOURD STIR FRY

INGREDIENTS


  • Bittergourd – 1 no

  • Urad dal -1 tsp

  • Oil – 2 tsp

  • Mustrd seeds – 1 tsp

  • Turmeric powder  - ½ tsp

  • Asafoetida – pinch

  • Curry leaves – few

  • Jaggery – 1 tbsp

  • Tamarind – 1 small melon sized

  • Salt – as per taste

  • Water – 1 cup


To Grind

  • Red chilli – 2-4 nos

  • Mustrad seeds -  ½ tsp

  • Grated coconut – 3 tbsp

INSTRUCTIONS


  • Wash, finely chop bitter gourd and soak it in water with pinch of salt. Grind the contents mentioned under to grind without water

  • In a pan, add oil, season with mustard seeds, urad dal, curry leaves, turmeric powder and asafetida.

  • Drain and add in the chopped bitter gourd, fry for a minute. Add water and bring to boil and cook till it is soft.

  • Once it is cooked add jiggery, tamarind extract, salt. Once it is cooked and dry add the ground paste and mix well for 2 minutes.
