INGREDIENTS:


  • Brinjal - 200g

  • Peanuts - 1 tbsp

  • Sesame seeds - 1 tsp

  • Dry red chillies - 6 nos

  • Coriander seeds - 1 tsp

  • Coconut dry - 10 g

  • Onion -1 no

  • Garlic - 4 cloves

  • Tamarind - small lemon size

  • Salt - to taste

  • Turmeric - ½ tsp

  • Oil - as required

METHOD:


  • Dry roast all the peanuts, sesame seeds, red chilli and coriander seeds on a slow flame.

  • Grind all the dry roasted ingredients along with 1 onion and 4 cloves of garlic ,Tamarind, Dry coconut, Turmeric. Make it into a fine paste by adding very little water.

  • Slit the brinjal into 4 pieces in the middle.

  • Add some oil and salt to this paste. Fill the paste into the brinjal as shown.

  • Put some oil in the pan and add the stuffed brinjal. Let it fry on all sides. Now add remaining masala by adding some water into it.

  • Now close the lid and allow brinjal to cook softly.\

  • Serve it hot.
