COORG STYLE PORK CURRY

INGREDIENTS


  • Pork with fat and skin – ¼ kg (cut into cubes)

  • Garlic cloves – 4-5 finely chopped

  • Ginger – ½ inch

  • Green chillies – 2 finely chopped

  • Curry leaves – few

  • Onion – 1 no finely sliced

  • Red chilli powder – ½ tsp

  • Turmeric powder – ¼ tsp

  • Water – ½ cup

  • Oil – as required

  • Salt – as per taste

  • Kachampuli or Kodava style vinegar – ½  tsp ( can be substituted with lemon juice or thick tamarind extract)


For the spice mix (dry roaste one y one and powder)

  • Coriander seeds – 1 tsp

  • Cinnamon – ¼ inch

  • Cloves – 2 no

  • Peppercorns- 5-6 nos

  • Cumin seeds – 1/2tbsp

  • Mustard seeds – 1 tsp

  • Fenugreek seeds – ¼ tsp

  • Curry leaves – few


INSTRUCTIONS


  • Slow Cook the meat with garlic, green chilies, curry leaves, onions, red chili powder, turmeric powder, very little oil, water and salt until the meat is tender.

  • Add the powdered spice mix to the meat, add very little oil if needed and cook on slow heat for 5-10 minutes till the water evaporates and spices blends well with meat.

  • Can add Kachampuli or salt if needed and serve.
