SPINACH MEDU VADA

INGREDIENTS:
Urad dal - 1 cup
Spinach - 1 cup
Carrot - 1 no
Onion - 1 no
Chillies - 1 no
Curry leaves - few
Oil - as required
Salt - as required
METHOD:
Soak urad dal for at least 4 hours and grind it in a wet grinder.
Take the batter in a bowl, add finely chopped onions, spinach, carrot, chillies, curry leaves and give it a mix.
Heat the pan on a medium flame add oil, take a small portion of batter shape to a ball, flatten with thumb.
Gently slide vada in the pan and shallow fry it till they turn golden on both sides.
Serve the spinach medu vada with chutney and sambhar.
