SELAVU ARACHA KUZHAMBU

INGREDIENTS:


For selavu podi

  • Coriander seeds - 2 tsp

  • Cumin seed - 1 tsp

  • Black pepper -  1tsp

  • Red chilli - 2 no

  • Cinnamon stick - 1 stick

For curry paste

  • Shallots - 10 nos

  • Cumin seeds - 1 tsp

  • Dry chilli - 6 nos

  • Garlic - 4 nos

  • Coconut - 1 cup

  • Tomato - 2 no

  • Brinjal - 3 nos

  • Coriander powder - 1 tsp

  • Curry leaves - few

  • Oil - as required


METHOD:

  • Dry roast all the masala under selavu podi until the spices are roasted. Grind to fine powder and keep it aside.

  • Heat oil in a pan add chopped onions, garlic and curry leaves and fry until onions turn golden. Add in ground selavu masala powder fry for few minutes then add grated coconut and fry for few minutes. Remove from heat and keep aside to cool. Grind the mixture.

  • Heat oil in a pan add mustard oil, shallots and curry leaves and fry till onions turn light brown. Add chopped tomatoes, brinjals and salt cook for a few minutes.

  • Add tamarind pulp and  grounded paste and 3 cups of water. Once it starts boiling add curry leaves and a big pinch of asafoetida.

  • Serve hot with rice.
