Vaazhayila Ada/ Ellaiappam (Banana Leaf Pancake)Serves 5

Ingredients:


  • Rice Flour – 2 cups

  • Salt as required

  • Ghee – as required to grease the leaf

  • Water as required

  • Green Cardamom – ½ tsp powder

  • Coconut (grated) – 2 cup

  • Jaggery – 2 cups

  • Banana Leaves – 5 pieces


Method:


  • Mix rice flour with salt and water and knead to form a smooth dough.

  • Keep a pan over medium flame, add water with jaggery and bring to boil. Add cardamom powder, grated coconut and little ghee and cook for a couple of minutes. Remove from flame and let it cool.

  • Take the dough and divide it into five equal portions.

  • Take a banana leaf and grease it with ghee. Spread the dough over the leaf and flatten it using wet fingers. 

  • Place the coconut stuffing on one side and fold the other half over it. Repeat for all five leaves.

  • Now steam cook the wrapped leaves for 10-15 mins.

  • Unwrap the adai from the leaf and serve hot.
