Vaazhayila Ada/ Ellaiappam (Banana Leaf Pancake)Serves 5

Ingredients:
Rice Flour – 2 cups
Salt as required
Ghee – as required to grease the leaf
Water as required
Green Cardamom – ½ tsp powder
Coconut (grated) – 2 cup
Jaggery – 2 cups
Banana Leaves – 5 pieces
Method:
Mix rice flour with salt and water and knead to form a smooth dough.
Keep a pan over medium flame, add water with jaggery and bring to boil. Add cardamom powder, grated coconut and little ghee and cook for a couple of minutes. Remove from flame and let it cool.
Take the dough and divide it into five equal portions.
Take a banana leaf and grease it with ghee. Spread the dough over the leaf and flatten it using wet fingers.
Place the coconut stuffing on one side and fold the other half over it. Repeat for all five leaves.
Now steam cook the wrapped leaves for 10-15 mins.
Unwrap the adai from the leaf and serve hot.
