Ingredients:
Raw Rice – 2 cups
Cooked Rice – 1 cup
Grated Coconut – ½ cup
Coconut Water – to bring the batter to right consistency
Salt to taste
Warm Water – 1/4cup + Dry Yeast – 1 tsp + Sugar – 1 tsp
Method:
Mix sugar with warm water. Add yeast and keep aside for 15 mins, until froth appears on the surface.
Soak raw rice for 4 hours and drain. Blend with cooked rice and grated coconut + little coconut water or coconut milk.
Mix the sugar and yeast solution to the batter. Add salt to taste. Leave the mixture to ferment the mixture overnight (atleast 8 hours).
Grease appam chatty with little oil. Pour one ladle full of batter. Twist the pan around to spread the batter inside pan. Close the lid and cook on low heat till the edge turns golden brown.
Serve with Vegetable Stew, Egg Curry, Chicken Curry
