Ingredients:
Ash Gourd – 250 g (cut into chunks)
Black Eyed Beans – ¼ cup
Green Chillies – 2-3 nos (slit lengthwise)
Coconut Milk – 250 ml
Curry Leaves – 1 spring
Coconut Oil – 2 tsp
Salt to taste
Method:
Soak the black eyed peas in water for 2-3 hours and cook until soft with salt. Keep it aside.
Steam the ash gourd until soft and cook completely. Make sure it doesn’t become too mushy. It needs to hold its shape.
In a sauce pan, add the ash gourd, black eyed peas, coconut milk, green chilli, salt and curry leaves. Add Coconut oil, stir well and simmer for few minutes. Can add little water if you want to make your gravy a little thinner.
Turn off heat, cover the pan and allow it to rest for 10 minutes. Serve hot.
