Ingredients:
Onion – ½ no
Mixed vegetables (Carrot, Peas, Cauliflower) – ½ cup
Boiled and Mashed Potato – ½ no
Coconut milk – 1 tbsp
Ginger (grated) – 1 tbsp
Green Chilli (minced) – 1 no
Water – depending on the consistency of the stew desired
Salt to taste
Oil - ½ tsp
Method:
Heat oil in a pan. Add in chopped onions, ginger, green chillies and sauté until onions turn golden brown.
Add in the vegetables and continue sautéing for 3 more minutes. (sprinkle little water to help the veggies cook)
Add the mashed potato to the mixtue and sauté.
Pour in 200 ml water and let it simmer for 5 mins.
Add coconut milk, and remove from flame.
