Ingredients:
Ginger (finely chopped) – 1 cup
Green Chilli (finely chopped) – 2 nos
Curry Leaves – 1 stalk
Tamarind – 1 lemon sized
Turmeric Powder – ½ tsp
Chilli Powder – ½ tsp
Asafetida – 1 pinch
Mustard Seeds – ½ tsp
Powdered Black Jaggery – 3-4 tbsp
Salt to taste
Coconut oil – as required
Method:
Dissolve tamarind in ½ cup water and keep aside.
Heat oil in a pan and splutter mustard seeds. Add ginger, green chillies, curry leaves, salt and saut until golden brown. Fry them crisp.
Add chilli, turmeric and asafetida powders and mix well.
Add the tamarind water to this and stir well until it thickens.
Add jaggery powder and mix well.
Remove from heat and allow to cool.
