Inji puli

Ingredients:


  • Ginger (finely chopped) – 1 cup

  • Green Chilli (finely chopped) – 2 nos 

  • Curry Leaves – 1 stalk

  • Tamarind – 1 lemon sized

  • Turmeric Powder – ½ tsp

  • Chilli Powder – ½ tsp

  • Asafetida – 1 pinch

  • Mustard Seeds – ½ tsp

  • Powdered Black Jaggery – 3-4 tbsp

  • Salt to taste

  • Coconut oil – as required


Method:


  • Dissolve tamarind in ½ cup water and keep aside.

  • Heat oil in a pan and splutter mustard seeds. Add ginger, green chillies, curry leaves, salt and saut until golden brown. Fry them crisp.

  • Add chilli, turmeric and asafetida powders and mix well.

  • Add the tamarind water to this and stir well until it thickens. 

  • Add jaggery powder and mix well.

  • Remove from heat and allow to cool.
